Ingredients: 4 Large Potatoes; 3 Tablespoon Butter; 5 Ounces of Corn Beef; 4 Tablespoons Thousand Island Dressing; 5 Oz Swiss Cheese, Slice or Grated; 1 Cup Sauerkraut, Rinsed and Drained

Ingredients

4 Large Potatoes
3 Tablespoon Butter
5 Ounces of Corn Beef
4 Tablespoons Thousand Island Dressing
5 Oz Swiss Cheese, Slice or Grated
1 Cup Sauerkraut, Rinsed and Drained

Instructions

Preheat oven to 425 degrees.
Pole potatoes with a fork, microwave 17 minutes, turning them as you go. Microwave until soft.
Cut off top third of the potatoes and scoop out inside of the potatoes and place in a large bowl.
Mash with the butter, then return to the potato shells.
Then top with; Corned beef, Thousand Island dressing, Sauerkraut, then Swiss cheese.
Place in a baking pan and bake 10 minutes.
Figure there is one potato per person, more people bake more potatoes.
