Chicken Enchiladas {Cooking with Mama Pearl}

Yields 1 9x13 Pan
Ingredients
- 2-3 Chicken Breasts chopped cooked
- 1 Large onion, diced
- 1 Clove garlic, Chopped
- ½ Tsp salt
- 2 Cans cream of chicken soup
- 3 Cups shredded cheddar cheese
- ¼ Cup milk
- 1 Can diced green chili’s
- 1 Pint sour cream
- 1 Tsp cumin (ground)
- ¼ Cup sliced green onions
- 12 Corn tortillas
- 1 Small can black olives
Instructions
- In a small frying pan on low heat, add 1 tsp cooking oil, when hot add the large onion and garlic, until onion is tender, but not brown.
- Set aside.
- In a large bowl, add the cooked chicken (this is also very good with leftover turkey), sour cream, green chili’s, cumin, salt, cream of chicken soup, 1-cup of the shredded cheese, and the cooked onions.
- With cooking spray, spray a 13x9x2 baking dish
- Start with one layer with Tortillas, add 1/3 of your mixture, then sprinkle with ½ cup of cheese, then another layer of tortillas and continue ending with chicken mixture, then last on top, the choice is yours.
- Place preheated 350 degree oven, for approximately 20 minutes, until it is bubbly and hot.
- Top with sliced olives and green onions, and serve
- Some people like to Take a warm tortillas and spoon mixture into each tortilla and roll up, Place in the baking dish, then cover with cheese, and put in oven.
