Cooking Navajo Tacos
Ingredients
- Bread!
- 3 ½ cups to 3 ¾ cups all-purpose flour
- ¼ cup sugar
- 1 teaspoon salt
- 1 package regular or quick acting yeast
- ½ cup very warm water
- ½ cup very warm milk
- 1 egg
- Topping!
- 1 pound ground beef
- 1 package of taco seasoning
- 1 can black beans, rinsed and drained
- 1 can refried beans
- 1 large onion, chopped
- 2 green onions, chopped
- 2 cups shredded lettuce
- 2 cups cheese, grated, use sharp cheddar or fiesta blend
- 1 to 2 cups butter flavored Crisco, or vegetable oil. For frying
Instructions
- Bread!
- Mix 2 cups of the flour, sugar, shortening, salt, and yeast in a medium bowl.
- Add warm water and war milk and egg.
- Beat on low speed on medium speed for 1 minute, scrapping the bowl frequently.
- Stir enough remaining flour to make dough easy to handle.
- Turn dough onto lightly floured surface.
- Knead about 5 minutes or until smooth and elastic.
- Place in greased bowl and turn greased side up. Cover and let rise in a warm place about 1 hour or doubled. (Dough is ready if indentation remains when touched.)
- Punch down dough. Make into balls and pat out like a pizza the size of your frying pan, or a smaller saucer size.
- Topping!
- In a large frying pan, cook beef until no longer pink, DRAIN.
- Add the taco seasoning and ¼ cup of water, simmer. When most of the liquid is gone add in the can of refried beans.
- Stir to keep warm.
- Put onions in its own bowl, and tomato, and onions, and cheese. Like a buffet.
- In a separate frying pan, heat oil(I use buttered flavored Crisco) Pat dough into patties and fry in hot oil until brown on both sides. Drain on paper towel.
- Top with first the refried beans, beef mixture, then cheese, onion, tomatoes, black beans, lettuce, and any other toppings you desire on a taco. Enjoy.
