Fresh Veggies All Year Long!

Growing up I was very lucky that my grandparents always had a garden. Every evening my grandma would tell me to go pick my veggie and I would run out to the garden and pick what I wanted to eat that night for dinner. I would most often choose one of my favorites; yellow squash, zucchini, or beets (which I called purples). I truly enjoyed eating veggies and did not know how lucky I was until I grew up and now I oftentimes miss that fresh taste and the variety of options. Especially in the winter months, I long for great produce.

A Few Ways to Enjoy Veggies

Here are some of my favorite veggies and my favorite ways to eat them:

Brussel Sprouts – Fry up a couple pieces of bacon and then crumble up the bacon and toss the Brussel Sprouts in the bacon and the bacon grease, then roast in the oven on a cookie sheet.

Parsnips – These are amazing and naturally sweet. I just make them into long slices and then toss with a little olive oil and roast them in the oven. So good!

Kale – I love creamed Kale and it is fast and easy. Cut up your Kale and saute in a pan with a little olive oil. Then add salt and pepper a squeeze of lime juice and a tablespoon of cream cheese. Fast, easy and delicious!

Zucchini – I add zucchini to almost anything; pasta dishes, omelets, fried potatoes, and stir fry dishes….all you need to do is cut up into 1/2 inch pieces and saute and put into whatever!

Produce is such an important part of eating healthier. Try some new veggies, look up new recipes, fall in love with veggies again!!
