Mexican Wedding Cookies
Ingredients
- 1 cup butter, softened
- 1 cup powdered sugar, divided
- 1 teaspoon vanilla
- 2 cups flour
- 1 cup finely chopped pecans
Instructions
- Preheat oven to 350 degrees
- Beat butter, ½ cup sugar and vanilla in a large bowl with a mixer until light and fluffy.
- Gradually add flour, beating on low speed after each addition, add the nuts.
- Mix Well.
- Shape dough into 48 one inch balls.
- Place 1 ½ inches apart on baking sheet.
- Bake 14 to 15 minutes or until bottoms are lightly browned.
- Cool 5 minutes on baking sheet.
- Roll warm cookies, 1 at a time in remaining sugar in a small bowl.
- Place on wire racks to cool.
