Ingredients

  • 1 cup butter, softened
  • 1 cup powdered sugar, divided
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 cup finely chopped pecans

Instructions

  1. Preheat oven to 350 degrees
  2. Beat butter, ½ cup sugar and vanilla in a large bowl with a mixer until light and fluffy.
  3. Gradually add flour, beating on low speed after each addition, add the nuts.
  4. Mix Well.
  5. Shape dough into 48 one inch balls.
  6. Place 1 ½ inches apart on baking sheet.
  7. Bake 14 to 15 minutes or until bottoms are lightly browned.
  8. Cool 5 minutes on baking sheet.
  9. Roll warm cookies, 1 at a time in remaining sugar in a small bowl.
  10. Place on wire racks to cool.
