Cooking Pancit Bijon with Mama Pearl. Pancit Bijon is a Filipino noodle dish.
The video above shows Mama Pearl making Pancit Bijon as well as Pretzel Cheesecake. The video starts part way through because that is when the Pancit Bijon starts to get made.

Pancit Bijon
Ingredients
- 8oz, Rice noodles (Bijon)
- 1 Chicken Breast cut into strips
- 2 Pieces of Chinese sausage
- 1 Large Onion, sliced
- 3 Cloves of Garlic, Chopped
- 3 Tablespoon Oil
- 1 Tablespoon Fish Sauce (Patis)
- 1 Tablespoon Soy Sauce
- 2 Stalks of Celery, Diced finely and diagonally
- 1 Cup of Cabbage, Shredded
- 1 Cup Chicken stock of water
- 1 Lemon, Cut into wedges
- 2 Scallions cut up for garnish
Instructions
- Soak rice noodles in hot water for about 10 minutes.
- Drain and set aside.
- Sauté the garlic in the oil.
- Add Chinese sausage, cook about 3 minutes, tossing and stirring occasionally to prevent burning.
- Add the onion and chicken. Cook about 4 minutes.
- Add the celery, carrots, cabbage, soy sauce, water, and fish sauce.
- Cooking and stirring.
- Add the drained noodles, mix and cook about 3 to 5 minutes.
- Serve in a serving platter, garnish with lemon wedges and scallions.
- If you want you may add ½ cup shrimps that have been shelled and deveined.
