Roasted Asparagus Asian-Glazed {Cooking with Mama Pearl}
Ingredients
- 3 Tablespoons Coca-Cola Divided (Not Diet)
- 1 Tablespoon plus 1 Teaspoon Soy Sauce, Divided
- 1 Tablespoon White Wine (Or Use White Vinegar)
- 1 Teaspoon Packed Brown Sugar
- 2 Cloves Garlic, Minced
- 1 Teaspoon Cornstarch
- 1 Pound Asparagus (Ends Trimmed)
- 1 Tablespoon Olive Oil
- ½ Teaspoon Salt
- ½ Teaspoon Pepper
- Toasted Sesame Seeds (Optional)
Instructions
- Preheat oven to 375 degrees.
- In a small bowl combine 2 tablespoon Coco-Cola and 1 Tablespoon soy sauce with the white wine, brown sugar, garlic and cornstarch. Set aside
- In a baking sheet lined with tin foil, lay out the asparagus.
- In a separate small bowl add the olive oil, 1 tablespoon Coca-Cola and 1 teaspoon soy sauce.
- Pour over the asparagus and toss until totally covered.
- Sprinkle with the salt and pepper.
- Bake 10 to 12 minutes, until asparagus is crisp tender
- Heat a large skillet over medium-high heat.
- Add the pan of asparagus and the fist bowl with the cornstarch into the pan and turn to fully coat asparagus.
- When the sauce has thickened, remove from heat and serve.
- Sprinkle with toasted sesame seeds if desired.
Notes
When selecting asparagus- look for even green shading along the whole length. Avoid wilted spears and asparagus that has a strong odor. Look for firm, smooth green stems with tightly closed tips; tips that are open are a sign of age.
