Semi-Sicilian Meatloaf

Ingredients
- 1 Pound of Ground Beef
- 1 Egg, Beaten
- 3 Cloves of Garlic, Chopped
- 1 Cup of Onion, Finely Chopped
- 1 Teaspoon Salt
- ½ Teaspoon Pepper
- 1 Cup Seasoned Bread Crumbs
- 2 Tablespoons Worcestershire sauce
- 1 Tablespoon Oregano
- ½ Cup Pine Nuts
- ½ Cup Raisins (Optional)
- 2 Tablespoons Flour
- 3 Tablespoons Catsup
- 1 Teaspoon Parsley
- 1 Teaspoon Italian Seasoning
- 6 Slices of Swiss Cheese (can use chevre goat cheese)
- 3 Slices of Provolone
- 1 Cup Baby Spinach
- 6 Slices of Bacon, Cooked
Instructions
- In a large bowl add the first 14 ingredients.
- Do not over mix.
- Line a cookie sheet with wax paper.
- Put the meat mixture on the paper and shape into a rectangle.
- Once flat, layer the bacon, swiss cheese, spinach, then the provolone cheese.
- Using the wax paper rollup, the meat tightly, like a jelly roll. Place lined cookie sheet, spread olive oil over the top
- Bake at 350 degree for one hour.
- When meat is done let sit for over 10 to 15 minutes before cutting, that will allow the juices to go back into the meat for more flavor.
